Overnight Oats
Ingredients:
4 tablespoons of oats
2 tablespoons of non-dairy yoghurt of your choice
125ml of non-dairy milk (our preference is almond or oat milk)
Handful of fresh fruit of your choice (we use blueberries and a few slices of apple)
1 tablespoon of sunflower & pumpkin seeds
1 teaspoon of maple syrup
½ teaspoon of cinnamon
sprinkle of raisins
Instructions:
Layer the yoghurt at the bottom of a bowl. Add ½ portion of the fruit (we added blueberries).
Add the oats and pour the maple syrup on top. Cover with milk. Spread the second portion of fruit on top (we used few slices of apple here).
Sprinkle with seeds, cinnamon and raisins. Cover and leave for the night in the fridge. Enjoy the next morning! 🙂
Sweet and Savoury pastries
(serves 2)
Ingredients:
Puff pastry sheet (vegan-friendly, you can find one in Lidl for example)
For the sweet version you’ll need vegan chocolate spread (e.g. The Happy Pear ‘Nuts about choco’)
For the savoury variation you’ll need the following :
Handful of mushrooms
3 cherry tomatoes
Handful of baby spinach
¼ of a small onion
Fresh chilli (add as little or as much as you like)
1 clove of fresh garlic
1 tablespoon of oil of your choice
Instructions:
Heat up the oven to the temperature recommended on the packaging.
In meantime, heat the oil on a pan and add chopped fresh garlic and chilli.
Chop mushrooms, onion and cherry tomatoes. Add to the pan and fry till mushrooms and onion are golden. Add spinach and leave on a heat for another minute.
Cut the puff pastry sheet into small squares, roughly 3×3 inches.
For the sweet version; spread one teaspoon of the chocolate spread in the middle of pastry square and fold in half. Secure by squeezing the edges with a fork. Be gentle not to destroy the pastry.
For the savory version; place 2 tablespoons of the veggie mixture in the middle of each pastry square (no folding required).
Put in the oven and bake according to the guidelines on the packaging. It typically takes 15-25 minutes depending on the size of your pastries.
Let cool for about 5 minutes. Enjoy! 😊
AB & B (Almond Butter & Banana)
Ingredients:
Cinnamon and raisin bagel
1 tablespoon of almond butter
½ ripped banana
1 teaspoon of maple syrup
(this is the original recipe we like to add some fresh berries and flake almonds or pecans to ours, feel free to add your own favourites 😉
Instructions:
Toast the bagel, spread the almond butter on top of it add few slices of banana. Sprinkle with maple syrup.
Add fresh berries, almond flakes /pecans if you wish. Serve hot.
The pastries look lovely – Yum!!
