Recipe – Vegan Energy Balls

Nuts, Dates & Dark Chocolate Energy Balls. No cooking, gluten free, dairy free (in fact everything free) dark chocolate energy balls. Perfect when you feel like grabbing a bar of chocolate. The challenge is to just have one. Ingredients 200g nuts mix 10-12 dates (de-stoned) A bar of dark chocolate of your choice 3 tablespoons of chopped pumpkin seeds Sea Salt Instructions Blitz the nuts in a food processor until roughly chopped. Add a pinch of salt Add the dates one at a time and pulse until each date is well blitzed Melt the dark chocolate. To do so break chocolate bar into small pieces, add 2-3 tablespoons of water and put in a microwave for 15 seconds. Stir well until smooth. If you find that there are still pieces of chocolate in the mixture, you can put it in microwave for another 5-10 seconds but be careful, you can easily overcook it. Combine all ingredients in a large mixing bowl (Don’t forget to add pumpkin seeds 😉 Roll into small, equal sized balls. They should be about 1.5″ diameter. Place each ball in a baking case. Store in an airtight container and keep refrigerated for up to 1 week, or freeze them and take them out as needed. Enjoy! WARNING: EXTREMELY DELICIOUS AND HIGHLY ADDICTIVE!!!!
